Ingredients

2 lbsweet potatoes, peeled and thinly sliced
2 1/2 cupsunsweetened 100% apple juice
1/2 tspground cinnamon
1/4 tspsalt

Directions

  1. Slice the sweet potatoes.
  2. In a large frying pan, blend apple juice with salt and cinnamon.
  3. Put the potatoes in next.
  4. Turn the heat on high and wait for the mixture to boil.
  5. Bring the heat down to a simmer.
  6. Cook for 20-25 minutes. Turn the potatoes over as needed to heat them evenly.
  7. Once the excess juice has cooked away and the potatoes have reached a tender stage, they are finished. Remove them from the heat and serve immediately.
