1 clove | garlic, skinned and crushed | |
1 large | onion, skinned and thinly sliced | |
2 stalks | of celery, finely chopped | |
2 | eggs | |
4 tbsp | tomato puree | |
1.5 lb | extra lean ground beef | |
4 oz | fresh breadcrumbs | |
seasoning mix to taste | ||
0.5 tsp | salt | |
0.25 tsp | ground black pepper | |

Directions
- Preheat your oven to 350 degrees Fahrenheit.
- Combine the oil, garlic, onions and celery in a bowl, cook 3-5 minutes to soften.
- In a large bowl beat together the eggs, tomato puree, crumbs and herbs. Work in thoroughly the meat and vegetables.
- Season.
- Spoon into a 6 x 10 inch baking dish pressing down lightly.
- Cook 20 mins. Leave to stand for 5 mins then place the meatloaf on a warm serving plate.
Recipe Notes
