Directions
- Heat 2 tbsp of olive oil in a large skillet over medium heat.
- Add 1 cup of your favorite chopped vegetables and stir-fry about 5 minutes, until vegetables turn tender.
- Add 1 cup of egg substitute and stir until egg is cooked through, about 5 minutes.
- Place 2 tortillas in a microwave, separated by damp paper towel for 5-10 seconds.
- Divine vegetables and egg equally onto each tortilla, spread the cheese and wrap.
