            Ingredients

            1 cupyour favorite chopped vegetables, fresh or frozen
            1 cupegg substitute
            2 pcs6" tortillas
            0.25 cupgrated lowfat Cheddar cheese
            2 tbspolive oil

            Directions

            1. Heat 2 tbsp of olive oil in a large skillet over medium heat.
            2. Add 1 cup of your favorite chopped vegetables and stir-fry about 5 minutes, until vegetables turn tender.
            3. Add 1 cup of egg substitute and stir until egg is cooked through, about 5 minutes.
            4. Place 2 tortillas in a microwave, separated by damp paper towel for 5-10 seconds.
            5. Divine vegetables and egg equally onto each tortilla, spread the cheese and wrap.
